DEVELOPED IN PARTNERSHIP WITH OUR TEAM AT THE SRA, THIS COURSE OFFERS PRACTICAL GUIDANCE FOR BRINGING SUSTAINABILITY INTO FOODSERVICE – STRAIGHTFORWARD, COMMERCIALLY VIABLE AND READY TO PUT INTO PRACTICE.
Restaurant Hero is a digital learning platform that has been sharing proven knowledge with the industry through online courses and podcasts since spring 2025. We’ve worked with them to create a hands-on module that offers practical advice on Sustainable Business Practices. The course is available free of charge to restaurant operators, founders and consultants on Restaurant Hero.

What’s included in the course?
The new sustainability course is made up of 12 modules, providing step-by-step guidance for hospitality businesses in developing operations that are better for both people and the planet. Each module provides concrete advice for taking practical action that is both responsible and economically viable.
Taking inspiration from the holistic nature of our Food Made Good Framework, the course covers the key pillars of sustainability in hospitality: Sourcing, Society and Environment. This includes sourcing ingredients responsibly by addressing environmental risks, traceability, agricultural methods, seasonality and local supply; tackling human rights and social risks across supply chains; putting more plants on the menu, choosing better meat and sourcing fish responsibly; team management and community engagement; and reducing environmental footprints, from food and material waste to carbon emissions.
Developed jointly with The SRA and enriched with practical industry knowledge and numerous case studies from the Restaurant Hero network, every chapter delivers actionable recommendations and proven examples from real businesses.

About Restaurant Hero
Restaurant Hero was founded by former Michelin-starred chef, Co-Founder of Beets&Roots and experienced business consultant Andreas Tuffentsammer. Drawing on more than 40 consulting projects for well-known food brands – including L’Osteria, Zeit für Brot, and Bio Company – he developed a vision for a platform that would connect theory and practice in meaningful ways. “We are democratising knowledge that is otherwise only accessible through exclusive networks or expensive one-on-one consulting,” he said. “Our goal is to strengthen the industry economically while making it future-ready.”

Whether it’s resource-saving kitchen processes, responsible leadership or supply chain management, sustainability runs through many podcast episodes. “The topic is everywhere but many businesses simply don’t know how to get started,” says Tuffentsammer. “With this new course, we give them a structured, realistic entry point.”
