Waste Training for Hospitality Teams: Better Bankside

READ HOW WE WORKED WITH BETTER BANKSIDE TO DELIVER A TAILORED TRAINING SESSION ON CIRCULAR SYSTEMS AND FOOD WASTE REDUCTION.
In 2024, as the lead partner in the Southwark Climate Collective, Better Bankside pioneered an innovative programme supporting more than 140 small- and medium-sized businesses across Southwark to reduce carbon emissions from their business operations. Funded by the UK Shared Prosperity Fund, the programme welcomed businesses from all sectors, regardless of their progress on decarbonisation. As part of the work, Better Bankside commissioned specialist providers to deliver expert practical training on a mix of sustainability topics.
The SRA was selected to lead the training session on food waste. To accomplish this, we introduced businesses to circular food design principles, helping them rethink food waste through a practical, systems-based approach. The training covered strategies for eliminating waste, re-circulating ‘good’ food and creating a circular system where resources are continuously reused instead of discarded. Businesses learned how to prevent surplus and inefficiencies, maximise redistribution and repurposing and ensure that any food that couldn’t be repurposed — or was inedible — was properly segregated and processed to be returned to nature.
By engaging decision-makers directly, the training helped businesses to integrate food waste reduction into their operations, aligning with both economic and sustainability goals.
