How can we equip foodservice businesses with the tools and knowledge to adopt a proactive approach to tackling Fat, Oil and Grease under the sink, and drive industry-wide change?
Kingspan and SRA joined forces in 2019 to tackle fat, oil and grease (FOG) – an unglamorous, overly ignored, but very significant issue for foodservice.
The aim was to bring together key players from across the wider industry such as water and fuel companies, foodservice operators, landlords and property management companies, to understand the major knowledge gaps, raise awareness and identify opportunities for collaboration. The results of these conversations and additional research fed into the SRA and Kingspan co-hosted FOG summit, and subsequent toolkit, Grease is the Word: a guide to help foodservice tackle fat, oil and grease.
Left unmanaged, Fat, Oil and Grease can be a menace, causing 70% of 366,000 sewer blockages every year. Regarded as a form of waste and managed well, they are harmless, can be transformed into biofuel and become a source of income for foodservice operators instead of the main cause of fatbergs. Kingspan and SRA both understood that commercial kitchens only become interested in FOG when they cause a problem.
Together, we committed to empowering operators by raising awareness of the potential problems they can cause and subsequent penalties, as well as the benefits FOG can bring. A successful FOG summit was hosted by SRA and Kingspan in spring 2019 to throw open the discussion with key stakeholders sharing valuable knowledge to an engaged audience representing the diversity of SRA members – large and small businesses.
Armed with the findings from the summit, the partners realised that a toolkit was needed to fill the clear knowledge gaps and to provide operators with the tools and information they needed to tackle this serious issue. With the support of Kingspan, SRA has since written and published a comprehensive toolkit, Grease is the Word: a guide to help foodservice tackle fat, oil and grease.
This resource has, and will continue to provide foodservice businesses with practical advice and tips on how to tackle FOG in their kitchen, with clear signposts to where, and from whom, necessary information and support can be found. The toolkit has been one of our most downloaded to-date.
