How can the Pastry World Cup (Coupe de Monde de la Patisserie) be assessed on its sustainability, to make steps for future improvement?
The Cup du Monde de la Patisserie, an international patisserie competition, approached the Sustainable Restaurant Association to audit the sustainability of its competition and event in anticipation of an ambitious long-term sustainability reform planned for future years of the competition. The Sustainable Restaurant Association carried out a comprehensive integrated assessment that included traditional survey assessments with a diverse array of stakeholders along with more cutting edge assessments of the rules and regulations and in-depth recipe analysis. The project applied a holistic lens to the auditing process, with the Sustainable Restaurant Association’s core framework principles of Sourcing, Society, and Environment being integrated into a progressive assessment designed to uphold the Cup du Monde de la Patisserie’s values whilst critically evaluating the structural determinants of sustainability in the competition.
