We have chosen this dish to put forward because it is using locally sourced, ethical sustainable meat that has a low carbon footprint. Brisket on the bone is an unusual cut that you don’t usually see which means a lot of it will probably go to waste so lets use it and make it delicious. We’re going to cook the whole joint in the ingredients for the sauce meaning we are using everything. The pasta we are going to use, comes from a local business.
