Executive Chef Paul Shearing has risen through the ranks at some of London’s most-loved neighborhood restaurants. Paul honed his skills in modern British food at the renowned One Aldwych before moving onto European cuisine at Bibendum and eventually landing at Gordon Ramsay’s Modern European Bread Street Kitchen. Now taking the helm at Roast, Paul has returned to his British roots, bringing a penchant for sustainably sourced food and a passion for seafood in particular, having grown up in the coastal county of Dorset. As Roast’s ethos has long centered around championing local suppliers and sustainable ingredients, Paul is a perfect addition to the restaurant and commits himself to travelling the width and breadth of the country to meet and form personal relationships with the suppliers, farmers and producers that Roast works so closely with.
