Sustainability is an important long-term focus for us with CH&CO Planet, our sustainability commitment, embedded in the company culture. From mindful recycling and seasonal menus to our focus on wellbeing and community support, we have a positive approach to sourcing produce, supporting society and protecting the environment. Our active team of Green Ambassadors, made up of people from across the business, champion sustainability at every opportunity. Our chefs also regularly attend supplier visits to farms and fisheries, for example, helping them to build an understanding of sustainable techniques and giving them the knowledge to inform customers where their food comes from.
We know that when it comes to sustainability, there is no ‘quick fix’ which is why we have a long-term commitment for the sake of the planet and future generations. Throughout 2018 we will continue to focus on sourcing fish responsibly and finding innovative ways to keep food waste to a minimum. Reducing the amount of single use disposables and plastics remains a high priority for us and our clients.
We chose this dish after recently working on a vegan/ vegetarian project to high light to our chefs what can be served maximising flavour & texture. The reason behind this was that the planet is over eating protein at rate that we will have a shortage in years to come, but it was also highlighted to us the impact of serving beef for example instead of the vegan/ vegetarian alternatives in terms of CO2 gases, grazing land & water saved. This really hit home & brought the message home. In no way are we saying people should turn vegan/ vegetarian, but imagine the impact on the planet if we all didn’t eat meat/ fish twice a week.View this Recipe
